Our Elk Salami (5.5oz) produced in California is a blend of Elk Meat and Berkshire Pork – infused with Red Port Wine, Red Dutch Cacao Powder, and Pink Peppercorn. The salami is fermented and aged in a dry room for three months.

Our Venison & Berkshire Pork Salami (5.5oz) is made with New Zealand Venison & Berkshire pork. It’s fermented and aged for three months. Seasoned with red wine, juniper berries, and black peppercorn. Certified Free-Range, Grass-Fed, Humanely-Raised, Antibiotic-Free, Hormone-Free. Venison is known as a leaner protein, dense in essential nutrients, tender in texture, and high in moisture.

Our Wild Boar Salami (5.5oz) is 100% Texas Wild Boar. Prepared with herbs and wine to give an exceptional complexity and authentic flavor of the Mediterranean. Its fermented, and then aged for two months in a dry room. Wild Boar has a darker, richer color compared to domestic pork, without the typical gamey taste.
