Mashed Potatoes with Garlic Olive Oil and Manchego Cheese:

There are nothing like mashed potatoes made from scratch with a garlic-y kick.

Whip these up for the next family dinner for a stick to your ribs side that is sure to please. (Substitute Monterey Jack, Parmesan, Romano, or a very sharp, white, English cheddar.)


Ingredients
2 Tbsp Garlic Olive Oil from Main Street Mercantile

3 pounds russet potatoes, peeled and cut into 2 inch chunks

Sea Salt

1 1/2 cups heavy cream or whole milk

1/4 cup Manchego Cheese, cut into 1/4 inch dice

Directions

1. Bring potatoes to a boil in a large pot of water. Salt the water and boil over moderately high heat until tender, about 20 minutes.

2. Drain and return to the pot.

Then:
3. Shake the pot over moderately high heat for 1 minute to dry the potatoes.
4, Mash the potatoes with a masher, then mash in half the cream/milk.
5. Add the remaining cream/milk and mash again.
6. Stir in the cheese to melt, then slowly stir in 1 Tbsp of the garlic olive oil.
7. Season with the pink sea salt and transfer to a serving bowl.
8. Drizzle with the remaining 1 Tbsp of garlic olive oil and serve.
